Ten Filipino Dishes that I Believe the World is about to Fall in Love Wh.

Here are ten Filipino dishes that I believe the world is about to fall in love with.

1. Adobo — The Soul of Filipino Cooking

Adobo is often called the unofficial national dish of the Philippines. Chicken or pork is slowly simmered in vinegar, soy sauce, garlic, bay leaves, and peppercorns.

The result is a perfect balance of salty, sour, and savory flavors. Served with rice, it is comfort food at its best.

Every Filipino family has their own version and everyone believes theirs is the best.

2. Sinigang — A Soup Like No Other

Sinigang is famous for its distinct sour broth, usually flavored with tamarind. It can be made with pork, shrimp, fish, or beef and is filled with vegetables like okra, eggplant, and water spinach.

It is the kind of soup that wakes up your taste buds instantly.

3. Kare-Kare - The Peanut Stew Masterpiece

Kare-kare is a rich stew made with oxtail, vegetables, and a thick peanut sauce. It is traditionally served with bagoong, a fermented shrimp paste that adds a salty punch.

It is both hearty and luxurious, a dish often reserved for celebrations.

4. Pancit - Noodles of Celebration

Pancit refers to a family of noodle dishes that symbolize long life and good health.

It is commonly served at birthdays and family gatherings. The combination of noodles, vegetables, meats, and seafood makes it both flavorful and festive.

5. Lechon — The King of Celebrations

Lechon is the centerpiece of many Filipino celebrations. A whole pig is roasted slowly over charcoal until the skin becomes incredibly crispy.

If you ever attend a Filipino wedding, fiesta, or Christmas celebration, lechon is almost always the star of the table.

6. Lumpia - The Addictive Filipino Spring Roll

Lumpia are crispy spring rolls filled with ground pork, vegetables, or shrimp.

They are incredibly addictive. In many Filipino parties, they disappear from the table within minutes.

7. Chicken Inasal -The Smoky Grilled Favorite

Chicken inasal comes from Bacolod in the Visayas. The chicken is marinated in vinegar, calamansi, garlic, and annatto oil before being grilled over charcoal.

The flavor is smoky, tangy, and unforgettable.

8. Halo-Halo -The Most Colorful Dessert

Halo-halo literally means “mix-mix.” It is a colorful dessert made with shaved ice, sweet beans, fruits, jellies, leche flan, ube ice cream, and evaporated milk.

Every spoonful tastes different, making it both fun and delicious.

9. Sisig -The Ultimate Bar Food

Sisig originated in Pampanga and has become one of the Philippines’ most famous dishes.

Chopped pork is mixed with onions, chili, and calamansi and served sizzling on a hot plate. It is bold, tangy, and incredibly flavorful.

10. Ube Desserts - The Purple Star of Filipino Sweets

Ube, a purple yam, has recently become an international sensation.

Its natural violet color and sweet, nutty flavor make it perfect for desserts such as cakes, ice cream, and pastries.

Many bakeries around the world are now embracing ube.

A Personal Reflection

When I first arrived in the United States as a young immigrant in the 1960s, Filipino food was rarely seen outside Filipino homes. Many Americans had never heard of adobo or sinigang.

Today, things are changing. Filipino restaurants are opening in major cities, chefs are bringing Filipino flavors into fine dining, and dishes like ube desserts are trending worldwide.

Seeing this recognition gives me a quiet sense of pride. These dishes are not just delicious they represent our history, culture, and family traditions.

And I believe the world is only just beginning to discover them.

The Origin and History of Sisig

Sisig was originally a vegetarian dish! First recorded in 1732 by Spanish friar Diego BergaƱo, it referred to a salad of green papaya or guava, seasoned with salt, vinegar, garlic, and pepper.
The sisig we love today, made from grilled and chopped pig’s face, evolved over time, with the sizzling plate version credited to Aling Lucing of Angeles City. Her innovation turned sisig into a Filipino culinary icon, now enjoyed in many variations like bangus, tofu, squid, and even ostrich!
From a simple sour salad to a sizzling sensation, sisig’s journey is as rich as its flavors. What’s your favorite sisig version? My favorite sisig is with ostrich meat in the Philippines.

Lastly, Did you know that.....
The tsinelas (slippers) we know today were introduced to the Philippines over 400 years ago by the Japanese! While the Japanese called their slippers zori, Filipinos adopted the Spanish term chinelas.
Interestingly, rubber slippers, now a household staple were popularized after World War II when Japan needed to repurpose its surplus rubber. The result? Affordable, durable rubber slippers that became a global sensation, earning the nickname "flip-flops" because of the sound they made while walking.
In the Philippines, slippers became a symbol of simplicity and status from being associated with corporal punishment ("hampas ng tsinelas") to playing childhood games like tumbang preso. Today, they remain an iconic part of Filipino life, often worn as a sign of humility and practicality.
