Californios: The First Mexican Restaurant to Earn Three Michelin Stars
For decades, French, Japanese, and Italian restaurants have dominated the highest ranks of fine dining. This week, culinary history was made when a Mexican restaurant joined that elite company. Californios, located at 355 11th Street in San Francisco, became the first Mexican restaurant in the world to receive the coveted Three Michelin Stars, the highest honor awarded by the Michelin Guide. Under the leadership of Chef Val Cantú, Californios has elevated traditional Mexican cuisine into an extraordinary artistic and gastronomic experience.
As a longtime food enthusiast who has written about cuisines from the Philippines, Southeast Asia, South America, and beyond, I find this recognition especially meaningful. It demonstrates that Mexican cuisine, long celebrated for its vibrant flavors and rich cultural heritage can now stand shoulder to shoulder with the world's finest culinary traditions.
Unlike conventional restaurants with extensive menus, Californios offers a single seasonal tasting menu that changes throughout the year depending on the freshest available ingredients. Guests embark on a carefully choreographed culinary journey lasting approximately three hours, with about fourteen to sixteen beautifully presented courses.
The experience often begins with elegant appetizers built around heirloom blue corn, fresh seafood, and caviar. Guests may enjoy a blue masa tostada topped with Dungeness crab or bluefin tuna, followed by refreshing aguachile featuring pristine seafood and vibrant citrus flavors. Signature seafood courses include mezcal-battered black cod served in a freshly made sourdough tortilla, as well as lobster prepared with delicate Mexican seasonings.
The meal continues with imaginative interpretations of classic Mexican dishes such as tamales, quail prepared al pastor style, seasonal vegetables accompanied by complex mole sauces, and fresh fish served family-style with handmade tortillas and heirloom beans. Dessert concludes the evening with creative fruit compositions, artisan ice cream, pastries, and handcrafted sweets that celebrate both California produce and Mexican culinary traditions. Every tortilla is made in-house from heirloom corn that has been traditionally nixtamalized, reflecting Chef Cantú's deep respect for authentic Mexican techniques while embracing modern innovation.
Such excellence naturally comes with a premium price. The current tasting menu costs approximately $390 to $425 per guest, depending on the reservation date and season. Optional wine pairings, premium beverage pairings, taxes, and service charges are additional. A dinner for two can easily exceed $1,000, making it one of America's premier luxury dining experiences.
Is it worth the cost?
For most of us, this is not an everyday restaurant. It is a destination reserved for life's special milestones, anniversaries, birthdays, retirements, or simply fulfilling a lifelong dream of experiencing one of the world's finest restaurants. Diners consistently praise not only the remarkable flavors but also the warm hospitality, flawless service, and surprisingly satisfying portions, leaving guests fully nourished rather than merely sampling tiny bites.
San Francisco has long been recognized as one of America's great food capitals. With Californios' historic achievement, the city now proudly showcases the world's first Mexican restaurant to receive Michelin's highest distinction. This honor is not only a victory for Chef Val Cantú and his talented team but also a celebration of Mexican culture and cuisine on the global stage.
The next time I visit San Francisco, Californios will certainly be on my list, not simply for dinner, but to witness history served one remarkable course at a time.
